What exactly is Pastry d’Edi?
One could say that Pastry d’Edi is a simple form of pastry, however, putting in this way would not imply how special it is. You can find thousands of different pastries, but what makes Pastry d’Edi memorable is the unique recipe. It is based on a Hungarian specialty called ‘retes’, which boasts several hundred years of history and tradition, made of smooth, kneaded dough, while having a whole new range of modern and astounding fillings.
Origins of the ‘retes’
Pastry d’Edi is the most similar to the Hungarian ‘retes’, which is a traditional form of pastry in the heart of Europe. According to legend, it first appeared in the region in the 16th century after the Turkish conquests in Central Europe, while its form as we know it today developed sometime between the 18th and 19th centuries. It already appeared in a cookery book written by a piarist priest between 1795 and 1799. In Hungary, it is a traditional dessert on celebratory occasions – a woman who can make her family some delicious ‘retes’ is considered a real treasure.
